Pasta Making Class: Mangiamaccheroni

Provisions Market Hall

Our resident Italophile is passionate about pasta and the traditions that vary from village to village and region to region. In this basic hands-on pasta making class Chef Rocky Maselli will explore some of the differences between Northern & Southern Italian pastas, plus some of the nuances of perfecting your pasta game. You’ll learn when dry pasta is better than fresh pasta, how to pair shapes with sauces, using squid ink, rolling, hand shaping and more. We’ll make some pasta together, share some tastes and send you home with the fruits of your labor.

*Mangiamaccheroni is a great word, isn’t it? Part of the cultural iconography of Naples, it refers to the Neapolitan macaroni-eaters, 19th-century street kids eating pasta with their fingers, which were featured in many prints and postcards of the day. The mangiamaccheroni symbolize the joie-de-vivre of the city to this day.

Alsace is that colorful region on the northeastern border of France: home to hearty, rich cuisine, (fondue, anyone?) and some of the most compelling white wines in the world. From a wine culture forged by both French and German influence, Alsatian wines have become something unique. They are at once full-bodied, spicy, and crisp - and while you may recognize the grapes from other parts of the world, you will be amazed at the depth of flavor and versatility of Alsatian versions. Come learn about the four noble grapes of Alsace– riesling, pinot gris, gewürztraminer & muscat– and how to pair them with Alpine cheeses, their history and the abundant flavor they offer.

Wine Class: Beyond Biodynamics

$40

Stephen Hagen, proprietor and winemaker of Antiquum Farm in Junction City, is doing something no one else in the country is doing with his vineyard. His property is a throwback to the days before modern winemaking; a time with no synthetic fertilizers or tractors. The entire vineyard is grazing-based: a team of draft horses is used to plow, flocks of trained sheep keep back the weeds, geese and chickens are both pest control and provider of natural fertilizers, and the benefits to the vineyard and its wholly natural care program are evident in the rich, lush, otherworldly fruit growing there.  Join us for an evening of eye-opening education and tasting with one of the wine world’s true visionaries.

The Pays Basque area of France has the distinction of producing very well known products, but remaining fairly obscure as a region. The odds are good that one of their hard-to-pronounce wines (often quite reasonably priced) or rich sheep's milk cheeses have passed your lips, but you may not have known it was Basque! The region is matched in size only by the Loire Valley, stretching 360 miles of land like a patchwork quilt, gold with wheat and corn, green with vines, lined with cows and sheep and mountains, with a climate influenced by both the Mediterranean and Atlantic - it is a place of beauty, distinction, and rich flavors.
