One legend has it that Roquefort was “created” by an amorous shepherd who, to better pursue a passing maiden, stashed his lunch in a cave and promptly forgot all about it. Upon returning some weeks later, the hapless shepherd found his cheese had grown blue mold… and ate it anyway… and liked it enough to share it with his comrades. From that first series of poor decisions, a world of fantastic cheeses has arisen. Categorically, they’re all known as Blues, but are by no means interchangeable in terms of form and flavor. We’ll taste and discuss a range of Old-World classics and some exciting American originals, with accompanying pairings of wine, beer, and small bites.
