Provisions Cheese Class: Goat's Milk Cheeses


For those of us with cheese on the brain, springtime means one thing first and foremost: young goat’s milk cheeses! Fresh, grassy, lemony goat’s milk cheeses are the perfect expression of the season, and we’ll start our class by celebrating some of the spectacular classics from France’s Loire Valley and Oregon’s Willamette Valley. Then we’ll follow the changes in goat cheese’s flavor from surface-ripened, to washed rind, to semi-firm and hard, aged formats, touching down in Italy, Spain, France, Holland and the US, with accompanying pairings of wine, beer and small bites.
