Provisions Cheese Class: Washed Rind Cheeses


We’re kicking off a new season of cheese classes with one of the most fascinating and diverse categories: cheeses washed in a saltwater brine, beer, wine or distilled spirits. Sometimes sweet in flavor, sometimes savory or even spicy; sometimes soft and runny in texture, sometimes hard and dense; washed rind cheeses are most often recognized by a reddish-orange rind and - yes, I’ll say it - a particularly pungent aroma. In this class we’ll peel back the stinky exteriors to reveal cheeses whose seductive complexity and long history cannot be matched. We’ll taste some old-world classics and some exciting American originals, with accompanying pairings of wine, beer and small bites.
