Pasta Making Class: Mangiamaccheroni

Our resident Italophile is passionate about pasta and the traditions that vary from village to village and region to region. In this basic hands-on pasta making class Chef Rocky Maselli will explore some of the differences between Northern & Southern Italian pastas, plus some of the nuances of perfecting your pasta game. You’ll learn when dry pasta is better than fresh pasta, how to pair shapes with sauces, using squid ink, rolling, hand shaping and more. We’ll make some pasta together, share some tastes and send you home with the fruits of your labor.

*Mangiamaccheroni is a great word, isn’t it? Part of the cultural iconography of Naples, it refers to the Neapolitan macaroni-eaters, 19th-century street kids eating pasta with their fingers, which were featured in many prints and postcards of the day. The mangiamaccheroni symbolize the joie-de-vivre of the city to this day.
