Designated by UNESCO as a World Heritage landmark for its gastronomic history, Parma, Italy, has long been renowned for two things in particular: Parmigiano-Reggiano and Prosciutto di Parma. In this class we’ll taste side-by-side samples, at different ages, and from different producers, of the “King of Cheeses,” and we’ll try a lineup of prosciutti from Parma and neighboring San Daniele, while drinking lambrusco and discussing the fascinating cultural history and the rigorous standards of quality that have made both the cheese and the ham such recognizable and dependable symbols of deliciousness.

One legend has it that Roquefort was “created” by an amorous shepherd who, to better pursue a passing maiden, stashed his lunch in a cave and promptly forgot all about it. Upon returning some weeks later, the hapless shepherd found his cheese had grown blue mold… and ate it anyway… and liked it enough to share it with his comrades. From that first series of poor decisions, a world of fantastic cheeses has arisen. Categorically, they’re all known as Blues, but are by no means interchangeable in terms of form and flavor. We’ll taste and discuss a range of Old-World classics and some exciting American originals, with accompanying pairings of wine, beer, and small bites.

The First Friday ArtWalk guided tour begins at 5:30pm at 5th Street Public Market! Featured at the Market will be husband and wife duo, FireSmith Copper. Jennah Litecky Yost and Paul Yost's partnership has brought them to the peaceful, rugged beauty of the Oregon mountains. Jennah graduated from the University of Oregon with a degree in studio arts and a minor in art history. Paul is a carpenter who puts his skill to use in historic restoration of Oregon's cherished timber frame covered bridges. Paul’s workmanship and Jennah's lifelong commitment to art have blossomed in copper. Together, with the help of family, they began FireSmith Copper.

Lane Arts Council's July 6th First Friday ArtWalk is guest-hosted by Voice Talent and Podcaster M. Clare Feighan. She currently produces videos and podcasts featuring conversations with women in a series called Simple Clarity. She has also been a member of the Oregon Country Fair Bill Wooten Endowment Committee, which funds grants in the Fern Ridge School District, for more than 20 years!
