Marche & Le Bar is a celebration of life and the bountiful Pacific Northwest’s locally grown and gathered foods. Market Ramen is all about making perfect tonkotsu-style ramen. Each bowl starts with a rich bone broth made from local pork, housemade noodles cooked to order and roasted pork belly–with garnishes of green onions, pickled mustard greens, ginger, roasted mushrooms, nori and a slow-cooked egg.
This style of ramen began in the Hakata district of Fukuoka City in Kyushu. Here in Eugene, Market Ramen is emulating that tradition with ramen made by hand using local ingredients and meats. Tonkotsu means "pork bones" in Japanese–and the broth is the central ingredient, made with pork from Deck Family Farms and Tails and Trotters. The noodles are made in house using wheat flour, salt, water and kansui, an alkaline mineral water. Designed in the casual style of an authentic ramen shop, Market Ramen is a pop-up by Marché chef Rocky Maselli and the team from Marché Restaurant Group, and the latest addition to the Public Market Eateries at the 5th Street Publc Market. Twelve seats at the counter offer the full experience, with traditional condiments and eclectic Japanese tableware.
Northwest Burgers, the latest creation from owner Garrett Kirsch, is now open! At Northwest Burgers, you can expect to see a variety of American Cuisine made from scratch. “We grind our own beef in house, make our own ketchups and if we aren’t able to make it, we outsource to local companies,” says Kirsch. “All of our products are fresh and local as much as possible.” Kirsch has been managing restaurants for 12 years and brings both experience and quality to the 5th Street Public Market with his newest eatery.
