"In 1981, I opened Casablance in a small spot n the basement of the 5th St. Public Market. I cooked almost every meal until 1993 when I opened Cafe Soriah.
Casablanca had fufilled my desire and craving for foods that I grew up eating. It reminded me of all the tastes and smells of my childhood, and of my family, friends, and the home I left behind.
It was a great experience to see Casablanca become a gathering place for students from the Mediterranean Region. I seemed to have provided them with a bit of what they missed about their homes and cultures. A loyal following from locals also became a part of the larger Casablanca family. While people don't stay put forever, many regular customers still frequent Casablanca. Now, a second generation of "Originals" seem to be carrying on the traditions.
While I don't spend as much time as Casablanca as I would like to, I am pleased to have Eric, Silas, Tig and the rest of the "Great Gang" at the helm. They do a fine job of providing wonderful food and great hospitality in the same old Casablanca tradition."
